Creativity without borders
Born in Sarajevo, Ljubomir Stanisic arrived in Portugal in 1997. He opened his first restaurant in 2004 (closed in 2008), in Cascais, where he immediately won several prizes. On January 2009, he inaugurated his first restaurant in Lisbon, 100 Maneiras, with a single tasting menu and, one year later, Bistro 100 Maneiras, named number 1 in the world by the prestigious Monocle magazine in 2017. The most Portuguese-Yugoslav-chef-ever is author of five books and a celebrity chef since 2011, when he made his first appearance on tv, as jury in the first “Masterchef Portugal”. He is the co-author and main character of “Papa Quilómetros” TV show, broadcasted by Fox International Channels across Europe in 2013 and, between 2017 and 2020, he became the host of the portuguese version of “Kitchen Nightmares”, an audience leader, that lasted for three seasons. In February 2019, he opened the new 100 Maneiras (1 Michelin star), in Bairro Alto, a project built for 4 years which is the consolidation of Ljubomir, both as a man and a cook, and 100 Maneiras, as a unique brand in gastronomy. O 100 é, antes de mais, parte da história de vida dos proprietários – Ljubomir, Nelson Santos e Nuno Faria – que, com a coragem de poucos, investiram num negócio de uma escala considerável sem rede de apoio, mas também dos outros que pensaram este projecto de vida com eles, como Mónica Franco, mulher do chefe, autora dos seus livros e directora criativa do grupo.
O 100 é feito de carne e osso… De gente como Hugo Marques Amaro e João Miguel Esteves, a dupla de arquitectos da HAJE que ajudou o projecto nascer, o desenhou e o adaptou, e ainda o acompanhou todos estes anos sem atirar a toalha ao chão…
